Cacio e pepe is a Roman classic: pasta, pecorino cheese, black pepper and cooking water, nothing more. At Terrazza Sommariva we finish it right at your table inside the cheese wheel — a small show many guests film.
Why in the wheel. The heat of the pasta melts the cheese from the wheel's walls into a silky sauce. It is a simple gesture that needs precise timing, which is why it is done in front of you, to order.
How to pair it. It is a bold dish: it works well as a shared first course before seafood or a Florentine steak. Ask our staff for a suitable wine from the list.
Where to try it. Terrazza Sommariva, Riva del Vin 731, on the Grand Canal next to Rialto Bridge, daily 08:00–23:30. It's on the menu; to book: WhatsApp +39 041 523 1164.
